Vinification |
Same as for the other white wines. Whole bunch crushed, basket-pressed. Fermentation in steel tank using wild yeasts. |
Ageing | In old (15-20y) barrel for between 5-15 years, with no topping, racking or additions. |
Tasting note | Lighter in colour than its sweeter cousin, the nose shows notes of light sweet barrel ageing, an iodine oxidation, dried walnuts and brioche. On the palate, a profile of a dry white wine with lifted acidity, with saline and iodine notes with yellow plum and peach. A long, intense, salivating finsh ends with lightly toasted yellow fruits. |
