Same as for the other white wines. Whole bunch crushed, basket-pressed. Fermentation in steel tank using wild yeasts. |
Ageing | In old (15-20y) barrel for between 5-15 years, with no topping, racking or additions. |
Tasting note | Clear, viscous golden hues in the glass. On the nose, notes of wild plum eau de vie, lightly floral, with quince and icing sugar. On the palate, the power of the lactones from the ageing recall Speyside whiskies. The breadth of the palate is carried by is sucrosity (c.70g/l residual), but also shows slightly aniseed notes of peach. The finish is broad and intense, underpinned by balancing salinity. |
