
| Name | The name of our top level red, Celèstra is taken from an Occitan word for blue (origin latin caelum, meaning sky. . .). A large part of the Grenache and Carignan in this cuvée is from a parcel of blue volcanic peridotite. Also, as a wine with a highly Languedocian profile, it could be said to be from ‘le grand bleu’. |

| Tasting note | Deep red with garnet notes. On the nose, intense, deep black and red fruits, particularly ripe blackberries, wild raspberries and cassis, with a light barrel note. On the palate, a similar profile as the nose with a whole range of sweet, dense, red and black fruits, overlaid with notes of violet and rounded out by soft brown sugar. The tannins are dense but soft and ripe and compliment well this full and concentrated palate. |

| Vinification |
Entirely destemmed, fermented at 25-28°C using only wild yeasts, twice-daily manual punch downs, post-fermentation skin contact for 35-40 days depending on the parcel. |
| Ageing | 75% matured sur lie in 228 litre Burgundy barrels (3rd fill), the rest sur lie in tank for 19 months. Blended and returned to tank for 6 months before bottling. Unfined. Lightly filtered. |

| Food | Given that this wine is elegant, aromatic and powerful, it would happily accompany dishes from civet de sanglier (wild boar) to roast game or beef. The Grenache element makes for an excellent accompaniment to dark chocolate desserts. |
