Vinification |
Direct-pressed, crushed whole bunch in a basket press; no settling. Juice put to barrel (4-10 wines old) for alcoholic fermentation using wild yeasts. |
Ageing | « Sur lie » for 7 months with some lees stirring. Cross-flow filtered. |
Tasting note | Rose, with bronze (typical carignan) lights. A delicate nose of red fruits, citrus and bread. A long, mineral palate showing the complexity of ageing in (old) barrel with the freshness of early-harvested grapes. The palate shows fresh grapefruit, redcurrants and marzipan. Long, intense finish. |
